Grilled Cedar Plank Salmon
Grilled cedar plank salmon is a delicious and flavourful dish that is perfect for summer cookouts. The cedar plank gives the salmon a smoky taste and prevents it from sticking to the grill. With the addition of Desolution Sound Seafood Rub, this recipe takes the flavours to a whole new level. Desolution Sound Seafood Rub enhances the flavour of the salmon by adding a combination of complementary ingredients that bring out the natural taste of sefaood.

Ingredients:
- Cedar plank(s) for grilling
- 4 (6-oz) salmon fillets, skin removed
- Desolution Sound Seafood Rub
- ¼ cup olive oil
- ½ teaspoon freshly ground black pepper
- 2 teaspoons lemon zest, from 2 lemons
- 1½ teaspoons finely chopped fresh rosemary
- 1½ teaspoons finely chopped fresh thyme
- 2 cloves garlic, minced
- Lemon wedges, for serving
Instructions:
- Soak the cedar plank(s) in water for 1-2 hours to prevent them from burning on the grill.
- Preheat the grill to medium heat.
- In a mixing bowl, combine the olive oil, salt, black pepper, lemon zest, rosemary, thyme, and minced garlic. Mix well to create a marinade.
- Place the salmon fillets in a shallow dish and generously coat them with Desolution Sound Seafood Rub. Pour the marinade over the salmon, making sure each fillet is well coated. Let the salmon marinate for at least 15 minutes to allow the flavours to infuse.
- Remove the cedar plank(s) from the water and place them on the preheated grill. Close the lid and let the plank(s) heat up for about 5 minutes.
- Carefully place the marinated salmon fillets on the hot cedar plank(s). Close the lid of the grill and cook the salmon for 10-15 minutes, or until it reaches your desired level of doneness. The cedar plank will infuse the salmon with a smoky flavour while protecting it from sticking to the grill.
- Once the salmon is cooked, remove it from the grill and serve it directly from the cedar plank. Garnish with lemon wedges for an extra burst of citrus flavour.
