Directions

For the Parsley Pesto:

Blend Ingredients: In a food processor, combine the parsley leaves, pine nuts (or walnuts), and garlic cloves. Pulse until finely chopped.
Add Olive Oil: With the processor running, slowly add the olive oil in a steady stream until the mixture is well blended but still has some texture.
Mix in Cheese: Transfer the pesto to a bowl, and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Set aside.

For the Scallops:
